Quick Egg Fried Rice
Fried rice is one of the best uses for leftover rice and comes together in about 10 minutes with high heat and simple seasonings.
Method:
- Use day-old rice or cool fresh rice to prevent clumping.
- Heat oil in a wok or large skillet on high heat. Add aromatics (garlic, green onions) and any quick veggies.
- Push ingredients to the side and scramble beaten eggs in the hot pan, then mix with the veggies.
- Add rice, a splash of soy sauce, and a drizzle of sesame oil. Stir-fry until heated through and lightly toasted.
Variations:
- Add cooked protein like shrimp, chicken, or tofu.
- Season with oyster sauce or a touch of fish sauce for depth.
- Top with chopped scallions and a sprinkle of toasted sesame seeds.
