Shakshuka for Two: Fast Version
Shakshuka is a flavorful North African/Middle Eastern dish of eggs poached in a spicy tomato sauce. It’s easy to scale for two.
Quick method:
- Sauté diced onion and bell pepper in olive oil until soft.
- Add garlic, cumin, paprika, and chili flakes and cook briefly.
- Pour in canned crushed tomatoes and simmer 8–10 minutes to thicken.
- Make wells and crack eggs into them; cover and cook until whites set (5–8 minutes).
Serving tips:
- Garnish with fresh herbs (cilantro or parsley) and crumbled feta.
- Serve with crusty bread or pita for dipping.
- Add cooked chickpeas for extra protein and texture.
