Homemade Scotch Eggs: Overview
Scotch eggs are boiled eggs wrapped in seasoned sausage, coated, and baked or fried. They’re hearty and portable.
Basic steps:
- Hard-boil eggs and cool in an ice bath; peel carefully.
- Flatten seasoned sausage meat (pork or a mix) and wrap each egg completely.
- Dredge in flour, dip in beaten egg, then coat in breadcrumbs.
- Fry until golden or bake at 400°F (200°C) for 25–30 minutes until cooked through.
Tips:
- Use sausagemeat seasoned with herbs and mustard for extra flavor.
- For a runnier yolk, soft-boil eggs (6–7 minutes) and handle gently when wrapping.
- Rest on a cooling rack after frying to keep crisp.
